Recipe + method:

Crispy Potato Pancakes (serves 2)


6 medium fresh potatoes
½ onion chopped (not grated)
2 eggs
4 tablespoons white flour
100ml sunflower oil (for frying)
sour cream (for serving)


Peel all potatoes. Grate 3 potatoes on bigger grater and 3 on extra fine grater. Add eggs, flour, onion, salt & pepper. Mix well. In a large frypan heat an oil until hot. Drop 2 tablespoons of potato mixture into the pan and spread out to form a circle of about 4mm thick (make 3 pieces at once). Fry until brown on the bottom (don’t turn until the pancake is brown or it will stick), about 3 to 5 minutes. Turn the pancake and fry the other side for 3 to 5 minutes or until golden brown and crisp. Serve with sour cream or goulash.
